Long before the tapas craze struck Manila, Calderón has been sitting quietly along a street that shares its name in the city of San Juan. Monchet Carballo, head of QA and Product Development, traces its roots to his food stall in Salcedo Market. “I’ve been there for eight years,” he shares. “The paella, the bacalao, you can find on our menu—that’s where I started selling them. Calderón didn’t really kick off until Marmi started pitching ideas, though. She saw this four-door apartment here in San Juan and made a commitment to get the place before even knowing what to do with it. I figured that putting up a restaurant here would be a really good experience.”

Local foodies will remember Rastro was one of the restaurants of the late great chef Ed Quimson. The tapas bar recently underwent some changes, taking a nouvelle approach on some dishes while retaining some long-standing favorites.

When in Spain, tapas are usually comprised of a small plate of olives, anchovies, and paper-thin slices of jamon enjoyed with a caña or two (okay, three… at least). These snacks would tide one’s hunger, as Spanish dinners tend to start late in the night. Think of it as an extended happy hour or a nightly block party!

Until I discovered the magic of tapas, I never realised that my food ADHD and my Spanish upbringing would make the perfect dining combination. My lack of ability to order a single dish and consume it wholly often puts me in ordering jeopardy when I’m dining out. I find it difficult to resist the temptation to sample everything that jumps out at me from restaurant menus because my internal adventurer has a bigger pull on my mental stability than my logical self. But tapas—and Tapeo, by extension—is all about variety.

 When you come upon a really strange challenge before reaching your destination, you may see it as bad luck; but most of the time I do manage to amass a certain degree of positivity to know it will be worth it. I say this because of the address of Las Flores: it says 25th Street in Bonifacio Global City, and it took us a while to figure out that the other half of the street is located on the other side of the block. They might as well name it another street because you know cars can’t slice through vacant lots and buildings.
