Just like a breakfast of tapa and longganisa, a hearty lunch of adobo, kare-kare, and nilaga, the Filipino dish Sinigang has nostalgic flavors that lure us back to our favorite mealtime memories of yesteryears, making it a quintessential comfort food. Sometimes, all you need to soothe your weary soul is a bowl of savory and sour, hearty stew, strewn with vegetables, bursting with flavor in every sip.
 
Traditionally, sinigang's broth is made sour by tamarind, but many souring agents also lend their flavors in the soup--fruits like calamansi, kamias, and guava are  common ingredients used for their sourness. The meats and seafood in the soup vary as well: pork, beef, fish, and shrimp are common proteins used, stewed with assorted fresh vegetables such as gabi, eggplant, kangkong, and okra. Modern recipes get even more playful with their sinigang creations, deconstructing some of the ingredients for crispy versions, or adding different fruits to make the flavor of the broth more complex. Another popular sour stew is the sinampalukang manok, loosely considered the chicken counterpart of sinigang, still using tamarind as its souring ingredient, but distinct with its addition of ginger.

Angel Pelayo-Ty would like to dispel the notion that Filipino food is easy to make. It is not. Without all the instant mixes, powders, pastes, and what have you that are available in the market, properly prepared and cooked Filipino food is complicated. One has to learn how to properly balance the gamut of ingredients that go into one single dish. So yeah, Filipino food is not what one would call a piece of cake. But at Pinác, a newly opened Kapampangan restaurant situated in the U.P Town Center, they make cooking heirloom recipes look effortless. 'Pinác' is Kapampangan for farm or swamp. It is a nod to the owner’s hometown of Candaba, Pampanga. We sat down with owner Angel Pelayo-Ty who seems to embody what her restaurant stands for: welcoming, friendly, and with absolutely no pretention. She mingles easily with customers, always ready to answer questions, quick to address complaints (which were few and far between), and for no apparent reason gives away free food to unsuspecting diners.

A few weeks ago I was at my favorite hangout in Taguig and I ran across a new restaurant near the taxi area of Market! Market!.  It caught my attention right away since its sign was blazing in the night, sort of beckoning me to come in.  I also noticed its bright colorful design and catchy name.  Instinctively I knew that this place was going to have great food.  I wasn’t far off on that account.  Juan and Joe is part of the Cabalen group of restaurants and its major theme is Filipino and American culture.  The food is based on this theme so there are burgers, shakes, and all sorts of Filipino and American all time favorites.  The restaurant is located right next to the Cabalen restaurant near the fountain area.  You can’t miss it, especially at night, since the sign will be ablaze like a beacon.
